Clean the pork trotters and blanch them in boiling water for 2-3 minutes, then rinse clean. Heat oil in a wok. When the oil is hot, add ginger slices, scallions, and star anise, stir-fry the pork trotters. Then add soy sauce and cooking wine and stir-fry briefly. Add water to cover the trotters, bring to a boil over high heat. Then reduce the heat and simmer for about 20 minutes. Add the soybeans, bring back to a boil, and add some sugar and salt.
