Place it cut-side down, arrange it in a rectangle, and cut into long strips. Squeeze out the water with a cloth, trim the edges, and transfer to a plate with a spatula. (2) Heat the lard in a wok, stir-fry the scallion, ginger, and garlic until they turn yellow, then remove them. Add the broth, salt, cooking wine, and sugar.
