Darker varieties are typically rich in antioxidant polyphenols and also have higher protein and trace element content compared to lighter varieties. For example, black sesame seeds are more nutritious than white sesame seeds, and black rice is more nutritious than white rice.
Therefore, compared to peanuts with light-colored skins, peanuts with dark-colored skins have higher protein content and lower fat content. Moreover, for peanut kernels, smaller peanuts contain more protein than larger ones. Thus, we should break away from our inherent preference for white and large foods, and instead favor those dark, small varieties.
