Fried peanuts are the most traditional bar snack. From casual eateries to high-end hotels, you'll always find them accompanying a good drink. Though they may seem simple, frying perfect peanuts does require a few tricks.
1. Rinse and Drain
Before frying, rinse the peanuts with water and then drain them. This first cleans off any dust, and second, it ensures they heat evenly and are less likely to burn.

2. Add to Cool Oil
Cooking experts point out that peanuts should be added to the oil when it's cool. Adding them to hot oil will cause them to heat up too quickly, easily resulting in a burnt exterior and a raw interior.
3. Remove at Seventy to Eighty Percent Done
Stir-fry over medium heat until the peanuts are golden yellow and there are almost no small bubbles in the pan, then scoop them out. At this point, the peanuts are about seventy to eighty percent cooked. If you wait until they are fully cooked, they will be completely burnt.
4. Add a Small Amount of Liquor
After scooping the peanuts out and placing them on a plate, while they are still hot, sprinkle on a small amount of liquor and mix well. Then, spread the peanuts out as flat as possible. After they have completely cooled, sprinkle on a small amount of salt. Peanuts treated this way will be uniformly crispy, have a beautiful color, and a delicious aroma.
