Precautions for Cooking Potatoes

Potatoes are a common household dish and a popular vegetable loved by our people. Many dishes can be made with them. What should be noted when cooking potatoes?

1. When peeling potatoes for cooking, only a thin layer should be peeled off, as the juice right under the skin is rich in protein. Peeled potatoes should be soaked in cold water if not cooked immediately to prevent them from turning black, but do not soak for too long to avoid the loss of nutrients;

2. Potatoes should be cooked over low heat to cook evenly and become tender. If cooked over high heat, the outside will become mushy or even crack, while the inside will remain raw;

3. Potatoes that have been stored for a long time often have bluish spots on their surface, which is unattractive for garnishes. If you add some vinegar to the cooking water (one tablespoon per kilogram of potatoes), the spots will disappear;

4. Waxy potatoes become mushy easily when boiled and are difficult to keep whole even when boiled with the skin on. If used for cold salads or as diced potatoes, you can add some pickle brine or vinegar to the cooking water, and the potatoes will remain whole after boiling;

5. Peeled potatoes should be stored in cold water, and adding a little vinegar to the water can prevent them from discoloring;

6. Soaking new potatoes in hot water for a moment before transferring them to cold water makes the skin very easy to peel. They can then be used for cooking.
