Many people like to soak vegetables in clean water for a period of time, thinking this makes them cleaner and safer to eat. In fact, soaking vegetables for a long time before washing does not remove pesticide residues more effectively; on the contrary, it can even increase the formation of carcinogenic nitrites.
First, soaking is not more effective for removing pesticide residues.
Dai Yunqing, an associate professor at the College of Food Science at China Agricultural University, points out that the main component of pesticide residues is organophosphorus, which is not water-soluble. In contrast, soaking vegetables in tap water with dishwashing detergent and then rinsing is more effective for removing pesticides.
Second, long-term soaking of vegetables can also increase nitrite content.
A study by Anhui Agricultural University found that soaking vegetables also increases their nitrite content. After soaking in clean water for 20 minutes, the nitrite content in the vegetables was higher than in those washed with dishwashing detergent and then thoroughly rinsed. The study suggests this may be because soaking creates an anaerobic condition, which enhances the activity of nitrate reductase while inhibiting the activity of nitrite reductase, thereby increasing the nitrite content in the vegetables.
Finally, prolonged soaking can also damage the leaves of the vegetables, leading to greater nutrient loss.
Many experts warn that nitrites in vegetables are likely more harmful than pesticide residues. Due to the over-application of nitrogen fertilizers, the nitrate content in vegetables is often high. When converted to nitrites, this can become a potential carcinogenic risk. Surveys have found that about 80% of the nitrites in our national diet come from vegetables. On the other hand, the situation with pesticide residues has improved significantly; recent inspections in China have shown that pesticide residue levels are on a downward trend, and the rate of exceeding standards is also decreasing year by year.
Therefore, when washing vegetables, it is more important to control nitrite levels. It is best to rinse vegetables under running water 3-4 times, and try to avoid soaking. If soaking is necessary, the time should not exceed 20 minutes. When preparing cold vegetable dishes, adding minced garlic and lemon juice can help reduce the risk of nitrite poisoning.
