Main ingredients: 1000ml whole milk, 500g rice wine
Other ingredients: 200g red bean paste
How to make Old Beijing Cheese Roll
1. This is homemade rice wine with a strong alcoholic flavor.
2. Filter out 500g, discarding the rice grains.
3. Pour 1 liter of whole milk into a pot and heat over low heat.
4. When it starts to bubble slightly, pour in the rice wine.
5. Continue heating until it bubbles; the milk will have become like tofu residue. Turn off the heat.
6. Pour the milk into a filter bag.
7. The whey that is filtered out can be used for other purposes.
8. Tie the bag and press with a heavy weight to continue filtering for about 2 hours.
9. This is what it looks like after filtering.
10. Put it into a resealable bag and use a rolling pin to flatten it.
11. Open the bag, shape the red bean paste into a long strip, and place it on one end.
12. Roll it up with the help of the bag and rolling pin, then refrigerate for about 1 hour.
13. Take it out and cut into pieces.
