Ingredients
Main ingredients: Tremella, lotus seeds, red dates, goji berries, rock sugar, as needed.
Instructions
1. Soak the tremella in clean water, remove the yellowish, hard base, then tear it into small pieces and set aside. Generally, three or four blossoms are sufficient.
2. Use lotus seeds that have had the cores removed, as they are not bitter. The amount used is according to personal preference.
3. Place water in a soup pot. The water should be added all at once, allowing room for evaporation. Do not add water during the cooking process.
4. Place the tremella, rock sugar (about 3 liang), red dates, and goji berries into the cold water. Turn on the heat, bring to a boil, and stir constantly to prevent the tremella gel from sticking to the pot. Once boiling, reduce the heat and simmer, continuing to stir frequently.
5. Add the lotus seeds later as they cook faster.
6. After adding the lotus seeds, continue to simmer until the tremella has turned into a gel and the soup is thick.

Instructions
1. Wash the red dates, lotus seeds, and tremella.
2. Add 1200ml of water to a soup pot and bring to a boil. Add the red dates, then reduce the heat and simmer for 30 minutes.
3. Add the lotus seeds and tremella and simmer for another 30 minutes. Add sugar and bring to a boil to finish.
Tips
1. If using dried lotus seeds, they must be soaked in water for 2 hours before cooking to become soft and tender. You can choose a variety of lotus seeds that are easy to cook, or opt for convenient, pre-processed vacuum-packed lotus seeds.
