How to Select Black Beans
1. Look at the surface: Authentic pure black beans are not uniform in size, some are large and some are small. Moreover, their color is not purely black; some are jet black, while others have a reddish hue. Fake black beans are generally dyed, completely jet black, relatively uniform in size, and show obvious signs of artificial processing.
2. Put them in vinegar: Stir the black beans in white vinegar. If the white vinegar turns red, they are authentic black beans. If the vinegar does not change color, they are fake black beans. The reason black beans change color in white vinegar is because their surface contains anthocyanins, which is the chemical reaction that causes the color change when anthocyanins encounter white vinegar.
