Cracked eggs: During transportation, storage, and packaging, eggs may develop cracks or fractures due to vibration, squeezing, and other reasons. This makes them susceptible to bacterial invasion. If left for a long time, they should not be eaten.
Stuck-to-shell eggs: This type of egg has been stored for too long, causing the yolk membrane to weaken and the yolk to stick to the shell. If only a part of the yolk is red, it can still be eaten. However, if the yolk membrane is firmly stuck to the shell, the attached area is dark black, and there is an off odor, it should not be consumed.
Stinky eggs: Bacteria invade the egg and multiply in large numbers, causing spoilage. The eggshell becomes a dull grayish color, and the shell may even rupture due to expansion from internal hydrogen sulfide gas. The contents of the egg will be grayish-green or dark yellow with a foul smell. This egg is inedible and can cause bacterial food poisoning.
Broken-yolk eggs: Due to violent shaking during transportation, the yolk membrane ruptures, causing mechanical yolk breakage. Alternatively, if stored for too long, bacteria or mold can enter the egg through the shell's pores, destroying the protein structure and causing the yolk to break, resulting in thin and murky egg liquid. If the yolk is not severely broken and there is no off odor, it can still be eaten after high-temperature cooking like frying or boiling. However, if bacteria have multiplied inside the egg, the protein has denatured, and there is a foul smell, it should not be eaten.
Dead-in-shell eggs: These are eggs where the embryo has stopped developing during the incubation process due to contamination by bacteria or parasites, combined with unfavorable temperature and humidity conditions. The nutritional content of this type of egg has changed. If the death occurred a long time ago, the protein will decompose, producing various toxic substances, so it should not be eaten.
Moldy eggs: Some eggs are exposed to rain or become damp, which washes away the protective film on the shell's surface, allowing bacteria to enter and cause mold and spoilage. This results in black spots and mold on the shell. This type of egg should not be purchased or eaten.
In addition, generally, eggs such as "yellow diarrhea" eggs and "blood streak" eggs should also not be purchased or eaten.
