Today I'm going to introduce a simple dish: Hot and Sour Shredded Potatoes. Choosing the right ingredients is key. Yellow potatoes are the best choice (white potatoes don't taste as good). You will also need scallions, ginger, pickled peppers, and dried chili peppers.

1. Peel the potatoes and shred them. If you're good with a knife, you can make the shreds thin and even.

2. Soak the shredded potatoes in clean water for 10 minutes, changing the water once, to remove the starch. This ensures the potatoes will be crispy when cooked.

3. Heat vegetable oil in a wok until it's very hot (about 80% heat). Add the scallions, ginger, and dried chilies until fragrant. Then, add the shredded potatoes and stir-fry. Immediately add vinegar and pickled peppers, and continue to stir-fry. If you add the vinegar too late, the potatoes will become soft instead of crispy.

4. Add chicken powder, seasonings, and salt, and stir-fry for a few more seconds. Do not cook for too long, or it won't taste good.

Important Note: The entire stir-frying process for the shredded potatoes is very short, taking only about 3 minutes. Turn off the heat as soon as the potatoes become translucent. Do not overcook.
