The optimal temperature for water to mix with honey is below 60°C. This is because honey is rich in nutrients, with glucose accounting for 30% to 50% and fructose around 40%. It also contains large amounts of vitamins B2, B6, C, K, and beta-carotene, as well as significant quantities of enzymes such as esterase, amylase, and oxidase.
Since the vitamins and enzymes in honey are easily destroyed at high temperatures, which reduces its nutritional value, it is best to use warm water below 60°C when preparing it.
