Delicious dishes for the start of summer; eat less greasy food and drink more water.

May 5th marks the start of summer. As the temperature rises significantly, the body's metabolism also accelerates. At this time, the secretion of digestive fluids decreases, which can lead to discomforts such as a loss of appetite. Therefore, we must not only arrange our work and rest time reasonably but also ensure our nutritional needs are met.

Drink plenty of water and avoid raw or cold foods. As the temperature rises, people tend to eat cool foods to cool down. However, overly cold food can irritate the intestines, affect the secretion of digestive fluids, reduce appetite, and may also cause symptoms like abdominal pain and diarrhea. On hot days with increased sweating, it is especially important to drink more water to replenish the body's lost potassium and help it quickly recover.

Eat more fruits and vegetables, and less greasy food. The greasier the food, the more tired people tend to feel. It is advisable to eat more fruits and vegetables, preferably fresh, locally grown, and seasonal produce, which helps supplement minerals and dietary fiber.

Now, I would like to recommend a delicious, colorful, and aromatic dish—Delicious Three-Shreds.

Ingredients: 180g enoki mushrooms, 30g carrots, 50g cucumbers, 30g roasted sesame seeds, appropriate amounts of scallions, light soy sauce, aged vinegar, and salt.

1. Shred the carrots and cucumbers. Trim the root ends of the enoki mushrooms and chop the scallions into small sections.

2. Add water to a pot with a pinch of salt. Once the water boils, add the enoki mushrooms and blanch for 10 seconds. Immediately remove and rinse with cold water. Drain the water, arrange them on a plate, and add the cucumber shreds for later use.

3. Heat oil in a pan. Add the scallion sections and simmer over medium-low heat until the oil turns slightly yellow and the scallions are fragrant and slightly charred. Remove the scallions and filter out some of the oil, leaving the base oil in the pan.

4. Sauté the carrot shreds in the base oil until fragrant, then remove and arrange them on top of the enoki mushrooms.

5. Mix the enoki mushrooms, cucumber, and carrot shreds with the seasoning sauce and scallion oil, and toss well. It is ready to be served. Enjoy a plate of "Delicious Three-Shreds" this summer season.
