As the weather gets hotter, people's appetites tend to decrease. While there are many ways to stay healthy in the summer, congee is definitely a great choice. Congee can serve as a staple food while also incorporating various meats and vegetables. It's delicious and an excellent nourishing food.
I. Appetizer and Digestive Aid: Tangerine Peel and Rice Congee
Effects: Regulates qi, strengthens the spleen, stimulates appetite, aids digestion, relieves food stagnation, and resolves phlegm to stop coughing. Suitable for children with indigestion and poor appetite.
Ingredients: Tangerine peel, rice.
Method: Wash the tangerine peel and cut it into thin shreds. Wash the rice thoroughly, add it to a pot along with the tangerine peel shreds and an appropriate amount of water. Simmer into a thin congee.
II. Heat-Clearing and Qi-Replenishing: Red Bean and Peanut Congee
Effects: Rich in protein, trace elements, and B vitamins, it has the effects of clearing heat and nourishing the stomach, making it especially suitable for children.
Ingredients: Red beans, peanuts, rice, rock sugar.
Method: Wash the red beans and peanuts and soak them in cold water until soft. Wash the rice and soak it in cold water for half an hour. Add water to a pot, then add the red beans, peanuts, and rice. Bring to a boil over high heat, then reduce to low heat and simmer until the congee is ready. Add a small amount of rock sugar to taste before serving.
III. Chinese Yam and Goji Berry Congee
Effects: Benefits the Lungs and Stops Coughing: Chinese yam contains saponins and mucilage, which can moisten the respiratory system, thus having the effect of tonifying qi and nourishing the lungs, and treating coughing due to lung deficiency and phlegm.
Method: Wash the rice and Chinese yam and add them to a pot to cook into a congee. Add goji berries and simmer for another 1-2 minutes before serving.
