Medical researchers have found that people who enjoy eating fresh dates and green peppers rarely suffer from gallstones.
Further research has revealed that fresh dates and green peppers are rich in vitamins, primarily water-soluble Vitamin C. This type of vitamin can convert excess cholesterol in the body into bile acids. Since the main component of gallstones is cholesterol, transforming it into bile acid removes the raw material needed for gallstone formation, thus preventing their development.
For the average adult, especially slightly overweight women, consuming more foods rich in Vitamin C—such as green peppers, green leafy vegetables, fresh dates, and citrus fruits—can help prevent gallstones. For patients already suffering from gallstones, eating foods rich in Vitamin C is also beneficial for alleviating their condition. Patients who have undergone gallstone surgery should supplement with Vitamin C long-term, with a daily intake of 200-400 milligrams, to prevent and reduce the recurrence of gallstones.
