Dr. Fan Zhihong from the Department of Nutrition and Food Safety at the College of Food Science, China Agricultural University, points out that storing cabbage dumplings is a matter of great importance. Once cabbage is chopped for the filling, it comes into contact with more bacteria. Therefore, uncooked cabbage dumplings must never be stored at room temperature, as they may spoil. It is best to store uncooked cabbage dumplings in the freezer of a refrigerator. Alternatively, they should be cooked to kill bacteria before being refrigerated.
To prevent the formation of nitrites during storage, refrigerated cabbage dumplings should be eaten as soon as possible. When eating them, they must be heated to high temperatures through methods such as steaming or pan-frying to ensure they are sterilized.
