Vegetables Suitable for Raw Consumption
Vegetables that can be eaten raw are mostly sweet and crisp. Heating can destroy their nutrients and texture, so they usually only need to be washed before being seasoned and mixed for direct consumption, such as carrots, daikon radish, tomatoes, cucumbers, bell peppers, the heart of napa cabbage, and cabbage. It's best to choose pesticide-free green vegetables or organic vegetables for raw consumption. Vegetables grown in soilless cultivation can also be eaten raw with confidence. Methods for eating raw include drinking fresh homemade vegetable juice or having fresh vegetables in a salad, with a little vinegar and less salt.
Vegetables Suitable for Both Raw and Cooked Consumption
This type of vegetable has a unique aroma and a crisp texture, often containing a high amount of fiber. After washing, they can be directly seasoned and eaten raw for a very fresh taste; if blanched in hot water and then mixed, the texture will become slightly softer, but without diminishing the original flavor. Examples include celery, sweet peppers, asparagus, okra, bitter melon, daikon radish, and kelp. There are many varieties of radish; for eating raw, those that are juicy and less pungent are better. However, radishes are considered cooling foods, so people with a yin-deficient constitution should preferably eat them cooked. The nutrients absorbed from some foods differ whether they are eaten raw or cooked.
For example, tomatoes contain lycopene, which can reduce the risk of prostate and liver cancer. To effectively absorb lycopene, tomatoes should be cooked. However, if you want to get vitamin C, eating them raw is more effective because vitamin C is easily lost during cooking.

The first category is cruciferous vegetables, such as broccoli and cauliflower. These nutrient-rich vegetables taste better after blanching, and their rich fiber is also easier to digest.
The second category includes vegetables high in oxalic acid, such as spinach, bamboo shoots, and water bamboo. Oxalic acid combines with calcium in the intestines to form calcium oxalate, which is difficult to absorb and interferes with the body's calcium absorption.
