How to tell if green chilies are spicy or not
Stir-fried pork with green chilies is an incredibly delicious dish, or stir-frying other ingredients with green chilies is also a very popular form of家常小炒 (homestyle stir-fry). Green chilies are always an indispensable part of the dinner table. Of course, some people love spicy food, while others don't. The green chilies sold on the market can be spicy or non-spicy, even from the same batch. So, how can you tell if they are spicy or not?
Spicy vs. Non-Spicy
When selecting green chilies, take a look at their bodies. If they are wide, plump, have a bluntly rounded tip, are large in size, and have a relatively yellowish color, they will not be very spicy. Conversely, green chilies that are slender, narrow, have a sharp tip, and are a relatively dark green are spicier. When deseeding these chilies, it's best to wear rubber gloves, otherwise, your hands will get a burning sensation, which is very uncomfortable. If your hands get burned by the chili, washing them with vinegar can provide relief.
Additionally, when buying green chilies, chili peppers, and bell peppers, choose ones with a glossy, firm surface and no cracks (as they will spoil easily during storage). The most important point is to gently squeeze the stem end. If it's wilted, it means it has been sitting for a few days and is not fresh. It won't last long at home either.
