A new study by researchers from the University of Illinois has found that the soy protein in soy milk (also found in soy products like tofu) can reduce the accumulation of harmful fat in the liver. Scientists discovered that while milk and foods containing soy protein have no different effect on the liver, compared to dairy foods, consuming foods with soy protein can reduce liver fat accumulation by 20%. Additionally, levels of triglycerides (fats harmful to heart health) decreased by the same magnitude. This result indicates that drinking soy milk helps prevent fatty liver.
Dr. Chen Hong, the lead researcher of the new study, analyzed that soy milk prevents fatty liver because soy protein helps repair a key signaling pathway in the liver involved in fat metabolism. Once this signaling pathway malfunctions, the liver cannot metabolize excess fat, leading to fat accumulation and the formation of fatty liver.
