Patients with coronary heart disease, high blood pressure, arteriosclerosis, or high blood lipids should eat river crabs sparingly or not at all, as crab roe is high in cholesterol.
● Eat them live
After a river crab dies, bacteria in its body will rapidly multiply and spread to the meat, causing symptoms such as vomiting, abdominal pain, and diarrhea in the consumer. Therefore, river crabs must be eaten live.
● Steam and eat immediately
It is best to steam and eat crabs immediately. If there are leftovers, they must be stored in a clean, cool, and ventilated place. Before eating, they must be reheated until thoroughly cooked.
● Steam or boil thoroughly
River (lake) crabs feed on animal carcasses or humus, so their body surface, gills, and gastrointestinal tracts are full of various bacteria and silt. Some people get sick because they don't wash the crabs clean, don't steam or boil them thoroughly, or because they eat raw drunken or pickled crabs, ingesting the bacteria or parasites inside the crab's body.
● Four parts not to eat
1. Crab stomach: This is the small, triangular, bony package inside the crab's shell. First, eat the top shell part of the crab. Use a small spoon to scoop out the middle crab stomach part, and gently suck the surrounding crab roe clean. Note, do not break the triangular-shaped crab stomach in the middle, as it contains dirty sand and should be discarded.
2. Crab heart: After eating the top shell, it's time for the body. Use scissors to cut off the excess crab legs and mouth. Use the handle of a spoon to pick out a hexagonal, flaky object from the middle of the crab's body; that is the crab heart and should be discarded.
3. Crab intestine: This is the black line running from the crab stomach to the crab's navel and should also be discarded.
4. Crab gills: These are the two rows of soft, eyebrow-like things on the crab's abdomen and should be removed.
