Sodium salts that appear more frequently are sodium benzoate and sodium citrate. According to food experts, sodium benzoate is mostly used as a preservative in beverages to extend shelf life, while sodium citrate is an acidity regulator used to enhance the sour taste in food, adjust the pH value, or act as a buffer substance. Many 100% pure juices on the market have a shelf life of less than 20-30 days, and their ingredient labels mostly only list water and concentrated juice, such as Huiyuan, Wei Chun, and Dole.
