The Rise of the Humble Vegetable: The Nutritional Benefits of Cauliflower

Introduction: Many people cannot distinguish between cauliflower and broccoli. In fact, both belong to the same genus and are extremely nutritious. What you must know is that these cauliflowers also have the effect of preventing and fighting cancer.

The scientific name of cauliflower is Brassica oleracea var. botrytis. Around the time when German biologist Koch discovered the tuberculosis bacillus, tuberculosis had been rampant in Europe. Europeans used cauliflower juice to make a cheap and effective medicine for treating coughs and asthma, known as "the poor man's doctor".

Dry-fried Cauliflower

Cauliflower comes in two types: white and green. In Beijing, it is called "caihua". Traditional Chinese medicine believes that cauliflower is neutral in nature and sweet in taste, with effects of strengthening the kidneys and bones, nourishing the brain and marrow, strengthening the spleen and nourishing the stomach, and clearing the lungs and moistening the throat. Green broccoli also has a certain effect of clearing heat and detoxifying, and is more suitable for those with spleen deficiency and stomach heat, bad breath, and vexation and thirst.

Cauliflower is rich in protein, trace elements, and carotene. Every 100 grams of cauliflower contains 2.4 grams of protein and 88 milligrams of vitamin C, which are 2.2 times and 4.6 times that of Beijing Chinese cabbage, respectively. Cauliflower is a health food for preventing and fighting cancer. The various vitamins, dietary fiber, carotene, and trace elements it contains are beneficial for cancer prevention and treatment. Among them, green broccoli contains more vitamin C, which can improve cellular immune function. Sulforaphane, an extract from cauliflower, can activate enzymes that decompose carcinogens, thereby reducing the occurrence of malignant tumors. Foreign research has also found that cauliflower contains various derivatives that can lower estrogen levels and prevent breast cancer.

Stir-fried Cauliflower with Swimming Crab

Cauliflower is not heat-tolerant and can be eaten after being briefly blanched in hot water. It is generally not recommended to stir-fry or stew cauliflower with cucumber, as cucumber contains vitamin C decomposing enzymes that can easily destroy the vitamin C in cauliflower.

Moistening Yin and Detoxifying Formula: For symptoms caused by heat toxins damaging yin, such as stomach heat, bitter taste in the mouth, dry throat and tongue, loss of appetite, headache, and red eyes. Take 250 grams of green broccoli, break it into small pieces and wash it. Soak 50 grams of white fungus in advance. Use a small amount of chrysanthemum and a little rock sugar. Simmer over low heat for about half an hour, remove the chrysanthemums, and let it cool before eating.

Kidney-Tonifying and Body-Strengthening Formula: Suitable for symptoms caused by weak spleen and stomach, such as soreness in the waist and knees, dizziness and tinnitus, fatigue and listlessness, and a sallow complexion. Take a pair of pig or sheep kidneys, cut them open, remove the membranes, and soak them in cold water for half a day. Soak 100 grams of black fungus in cold water until it expands. Break 200 grams of cauliflower into small pieces, wash it, and blanch it in boiling water. Cut the pig or sheep kidneys into cubes and stir-fry them with the black fungus, adding an appropriate amount of ginger, garlic, and salt. When it is 80% cooked, add the cauliflower and stir-fry until done.
