Tea picked less than a month ago is considered fresh. Take spring tea, for example. Freshly picked spring tea contains highly active substances such as tannic acid and alkaloids. Consuming large amounts can overstimulate the human nervous system, leading to accelerated blood circulation and heart rate, similar to intoxication, and causing a feeling of palpitations. It is best to let it sit for a while until some of the polyphenols have oxidized before drinking.

Fresh daylilies contain colchicine, which is absorbed by the intestines and converted into a toxic substance in the body, causing poisoning in the consumer. In contrast, dried daylilies are safer because they undergo processes like steaming and sun-drying, which remove most of the colchicine. 4. Fresh wood ear mushrooms can trigger solar dermatitis
In fact, dried wood ear mushrooms are safer than fresh ones. Fresh wood ear mushrooms contain a special component called "porphyrin." Porphyrin is a photosensitive substance. After consuming fresh wood ear mushrooms and being exposed to the sun, it can trigger phytophotodermatitis, and may also cause skin itching, with redness, swelling, and pain appearing on exposed parts of the skin. Dried wood ear mushrooms are a finished product that has been sun-dried. During the sun-drying process, most of the porphyrin is decomposed. Before consumption, they are soaked in water, and any remaining toxins are dissolved into the water, making the rehydrated dried wood ear mushrooms non-toxic. It should be noted that the water for soaking dried wood ear mushrooms should be changed several times.
5. Fresh and tender pork liver may induce diseases
Some people like to eat "fresh and tender" pork liver. Therefore, when cooking, they often stir-fry it quickly for a short time to achieve this tenderness. However, this practice hides significant risks: First, the liver is the largest detoxification organ in a pig's body, where various toxic metabolic products accumulate. If it is not heated thoroughly and sufficiently, some toxic substances may remain, which could induce disease after consumption. Second, quick stir-frying is difficult to kill certain pathogens or parasite eggs in the pork liver, leading to harm to human health after ingestion.
