Cooking Method

For cooking shrimp, two main seasoning methods can be used: basic seasoning and seasoning during cooking. For the first method, mix one-third of the base seasoning with the shrimp during the marinating process to give it a basic flavor profile. Then, in a separate bowl, prepare a sauce by combining fine salt, MSG, broth, cooking wine, and starch slurry. Heat oil in a wok until hot, then add the seasonings and stir-fry until fragrant. Add the blanched shrimp, pour in the pre-mixed sauce, and quickly toss and stir to ensure the sauce evenly coats the shrimp. Finish with a drizzle of bright oil before serving. The "sauce-pouring" method results in even and quick coating, allowing for timely serving. Otherwise, using the "simmering" method, which has a longer cooking time, can affect the dish's fresh and tender texture.
