Good and Bad Food Pairings to Know

Introduction: The nutrients in food are innumerable. When combined, some foods work together synergistically, doubling their benefits; while others cancel each other out, interfere with one another, and even have adverse effects on the human body. Recently, the Japanese magazine "Newsweek" published a list of common food "good and bad pairings" introduced by Professor Takuji Shirasawa of Juntendo University School of Medicine.

Food Good Pairings

Ham + Melon

This is a common food pairing in foreign bars and is nutritionally sound. Ham is high in sodium. A high concentration of sodium in the blood can cause blood pressure to rise, and even lead to hypertension. Melon, on the other hand, is rich in potassium, which helps the body neutralize and excrete excess sodium.

Beer + Kimchi

Kimchi contains niacin (Vitamin B3), which helps break down alcohol and acetaldehyde, the main culprit of hangovers. Niacin also promotes fat metabolism. If a dish is greasy, adding a side of kimchi can help cut the grease and aid digestion.

Sandwich + Celery

Celery is often used as an ingredient in sandwiches. It is rich in calcium and iron, enhancing the nutritional value of the sandwich. Every 100 grams of celery contains about three times the calcium of an equal weight of milk. Celery also has anti-aging, carcinogen-inhibiting, detoxifying, and bowel-cleansing effects.

Eel + Umeboshi (Pickled Plum)

Eel is rich in protein, Vitamin A (which can boost immunity), and Vitamin B1 (which helps convert sugar into calories). Umeboshi contains citric acid, which stimulates appetite and relieves fatigue. Eating them together can help prevent summer lethargy.

Noodles + Rice

Both are carbohydrate-rich staples, but they are relatively deficient in Vitamin B1, which is needed to convert carbohydrates into energy. When carbohydrates are directly converted into fat, it can lead to obesity. Additionally, be careful not to consume too much salt when drinking the noodle soup.

Beer + Potato Chips

When the liver breaks down alcohol, it secretes enzymes that promote fat synthesis. If you eat high-fat foods like potato chips or fried chicken while drinking, it will accelerate fat synthesis.

Black Tea + Lemon

Tests have shown that some imported lemons have "OPP" (o-phenylphenol) on their peels. OPP is often used as a fungicide and preservative. When it comes into contact with the caffeine in black tea, it may form carcinogenic substances. For safety's sake, it is recommended to peel the lemon.

Fish + White Radish

Fish contains lysine, an essential amino acid for the human body that promotes tissue growth and repair. White radish contains antibodies that inhibit the effects of lysine, which can interfere with the body's absorption of lysine. However, this is not a concern if the radish is cooked.
