Congee, a humble yet beloved staple across Asia, is more than just a dish—it’s a comforting ritual. Its classic recipe, passed down through generations, celebrates simplicity and versatility. At its core, congee requires just two ingredients: rice and water. The magic lies in the slow simmering process, which transforms plain grains into a creamy, porridge-like consistency.

To begin, rinse a cup of jasmine or long-grain rice until the water runs clear, then combine it with five to six cups of water in a heavy-bottomed pot.
