Classic Spinach Tower: A Timeless Delight

The classic spinach tower, or "Tourte Épinards," is a elegant French dish that combines simplicity with sophistication. Perfect as a starter, side dish, or light meal, it showcases the natural flavors of spinach in a visually stunning presentation.

To begin, prepare the filling by sautéing 500g fresh spinach in olive oil until wilted. Drain excess moisture thoroughly, then mix in 200g ricotta cheese, 2 beaten eggs, 1/2 cup grated Parmesan, and a pinch of nutmeg. Season with salt and pepper to taste. For the crust, roll out 300g puff pastry into a thin sheet and line a greased mold, leaving excess pastry to drape over the edges.

Pour the spinach mixture into the crust, fold the pastry edges over to cover partially, and brush with egg wash for a golden finish. Bake at 180°C (350°F) for 35-40 minutes, until the pastry is puffed and crispy. Let it rest for 10 minutes before unmolding.
