Classic method of stewing tofu with cabbage

Classic Chinese Braised Cabbage with Tofu

Braised cabbage with tofu is a timeless Chinese comfort dish, loved for its simplicity, nourishment, and delicate flavors. This recipe requires minimal ingredients but delivers maximum warmth, making it a staple in home cooking.

Start by preparing the ingredients: a medium head of Napa cabbage (cut into bite-sized pieces), 300g soft tofu (cubed), 2 cloves of garlic (minced), and a small piece of ginger (sliced). Heat 2 tablespoons of vegetable oil in a wok or deep pot over medium heat. Sauté the garlic and ginger until fragrant, about 30 seconds. Add the cabbage and stir-fry for 2-3 minutes until slightly wilted.

Pour in 500ml of vegetable broth or water, then gently add the tofu cubes. Season with 1 teaspoon of salt, ½ teaspoon of sugar, and a splash of light soy sauce for color. Bring to a gentle simmer, then reduce the heat, cover, and cook for 8–10 minutes, allowing the flavors to meld. Avoid excessive stirring to prevent the tofu from breaking.

Finish with a sprinkle of white pepper and a drizzle of sesame oil. Serve hot with steamed rice. The dish balances the sweetness of cabbage, the silkiness of tofu, and the umami of the broth, creating a harmonious and satisfying meal. It’s a perfect example of how humble ingredients can create extraordinary comfort.
