How to Make Homemade Chili Oil

Making chili oil at home is simple and rewarding, allowing you to customize the heat and flavor to your liking. Here’s a basic recipe to get you started.

First, gather the ingredients: dried chili flakes (or whole dried chilies), Sichuan peppercorns (optional, for numbing aroma), vegetable oil, and a pinch of salt. For extra depth, you can also add garlic, star anise, or cinnamon.

Begin by toasting the chili flakes and peppercorns in a dry pan over low heat for 1-2 minutes until fragrant—this step enhances their flavor without burning. Let them cool slightly.

Next, heat about 1 cup of vegetable oil in a saucepan over medium heat. Once the oil shimmers (around 180°F/82°C), remove it from the heat and let it cool for 2-3 minutes. Pouring hot oil over chilies too quickly can burn them, resulting in a bitter taste.

Combine the cooled chilies and peppercorns in a heatproof jar. Carefully pour the warm oil over them, ensuring they are fully submerged. Add salt and any optional spices. Seal the jar and let it steep for at least 24 hours—this allows the flavors to meld beautifully.

Store the chili oil in a cool, dark place for up to a month. It adds a spicy, aromatic kick to noodles, dumplings, stir-fries, or even salads. Experiment with different chili varieties to find your perfect balance of heat and flavor!
