Classic Homemade Yogurt Recipe

Making yogurt at home is simple and rewarding, requiring just a few basic ingredients and tools. The classic method relies on live active cultures to transform milk into a creamy, probiotic-rich delicacy.

Start by selecting fresh milk—whole milk yields the creamiest result, though low-fat works too. Gently heat 4 cups of milk to 180°F (82°C) over medium heat, then let it cool to 110°F (43°C). This step kills unwanted bacteria and creates the ideal temperature for cultures to thrive.

Next, whisk 2 tablespoons of plain yogurt (with live cultures) or a yogurt starter into the warm milk. Pour the mixture into a clean glass jar, cover it loosely, and incubate for 6-12 hours. Maintain a consistent 110°F (43°F) environment using a yogurt maker, an oven with the light on, or a wrapped heating pad. The longer it incubates, the tangier the yogurt.

Once set, refrigerate for at least 4 hours to thicken. For thicker Greek-style yogurt, strain it through cheesecloth for a few hours.
