Classic recipe for kiwi biscuits

Classic Kiwi Cookie Recipe

Kiwi cookies, with their vibrant green color and sweet-tart flavor, are a delightful treat that combines the freshness of kiwi with the warmth of homemade cookies. Here’s a classic recipe to bring this unique treat to your kitchen.

Ingredients:

- 1 ½ cups all-purpose flour

- ½ cup softened butter

- ½ cup powdered sugar

- 1 large egg

- 1 ripe kiwi, peeled and finely diced

- 1 tsp vanilla extract

- ½ tsp baking powder

- A pinch of salt

Instructions:

1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2. Cream butter and sugar until light and fluffy. Beat in the egg and vanilla.

3. Mix dry ingredients: Whisk flour, baking powder, and salt in a separate bowl. Gradually add to the wet ingredients, stirring until just combined.

4. Fold in kiwi gently to avoid crushing the pieces.

5. Drop spoonfuls of dough onto the baking sheet, spacing them 2 inches apart. Flatten slightly with the back of a spoon.

6. Bake for 12–15 minutes until edges turn golden. Let cool on the sheet for 5 minutes before transferring to a wire rack.

Tip: For extra flavor, add a sprinkle of lime zest to the dough. These cookies are best enjoyed fresh, with the kiwi adding a juicy burst in every bite!
