Classic Chicken and Mushroom Congee

Chicken and mushroom congee is a comforting, nutrient-rich dish cherished in many Asian households. Its creamy texture and savory flavor make it a perfect meal for any time of day. Here’s a timeless recipe to recreate this classic.

Start by rinsing ½ cup of jasmine rice until the water runs clear, then soak it in cold water for 30 minutes. In a pot, combine the rice with 4 cups of water or chicken broth, bring to a boil, then reduce heat to low and simmer for 40 minutes, stirring occasionally, until the rice breaks down into a porridge-like consistency.

While the rice cooks, dice 200g boneless, skinless chicken breast into small pieces. Clean and slice 150g fresh shiitake mushrooms.
