In a bowl, combine the seaweed, vegetables, and a dressing of 2 tbsp rice vinegar, 1 tsp soy sauce, 1 tsp sesame oil, ½ tsp sugar, and a pinch of salt. Garnish with toasted sesame seeds and chopped scallions for extra aroma. Toss gently to coat evenly.
