Start with a large napa cabbage. Cut it into quarters, soak in salted water for 2-3 hours until softened, then rinse and drain. For the paste, mix 1 cup of glutinous rice flour (cooked into a porridge and cooled) with ¼ cup of fish sauce, 3 tablespoons of chili flakes, 1 tablespoon of minced ginger, 5 cloves of garlic, and 1 tablespoon of sugar.
