Classic Braised Tofu with Minced Pork

Braised tofu with minced pork is a beloved Chinese comfort dish, celebrated for its simplicity and rich flavors. This classic recipe transforms soft tofu into a savory, satisfying meal with just a few key ingredients.

Start with firm tofu, drained and cubed, and 150g of lean pork minced. Marinate the pork with a teaspoon of soy sauce, a pinch of white pepper, and a dash of sesame oil for 10 minutes. Heat 2 tablespoons of oil in a wok, stir-fry the minced pork over medium-high heat until browned, then set aside. In the same wok, gently pan-fry the tofu cubes until golden on all sides, being careful not to break them.

Return the pork to the wok, add 2 tablespoons of light soy sauce, 1 teaspoon of dark soy sauce for color, a spoonful of sugar, and 100ml of water or broth. Bring to a simmer, then reduce the heat and let it cook for 5-7 minutes, allowing the tofu to absorb the savory sauce. Thicken the sauce with a cornstarch slurry if desired, and garnish with chopped scallions or cilantro.

Serve hot with steamed rice. The dish balances the tender tofu with seasoned pork, creating a harmonious blend of salty, umami, and slightly sweet notes—a timeless favorite that warms both the heart and the stomach.
