Classic Pomelo Tea Recipe

Pomelo tea, a beloved comforting drink, blends the citrusy brightness of pomelo with the warmth of black tea and honey. Here’s a timeless recipe to recreate this classic at home.

Start by selecting a ripe pomelo—its thick peel should be fragrant. Carefully peel the fruit, separating the juicy pulp from the pith (reserve the peel). Cut the peel into thin strips, then blanch them in boiling water for 5 minutes to reduce bitterness. Drain and set aside.

Brew 2 tablespoons of black tea leaves (like Assam or Ceylon) in 2 cups of hot water (90°C) for 3–4 minutes. Strain and let the tea cool slightly. In a saucepan, combine the blanched peel, ¼ cup of honey, and 2 tablespoons of sugar. Add ½ cup of water and simmer over low heat for 15–20 minutes until the peel turns translucent and the syrup thickens.

Mix the pomelo pulp into the cooled tea, then stir in the warm peel syrup. For extra richness, add a pinch of cinnamon or a star anise while simmering.
