Chive boxes, or *jiucai hezi*, are a beloved Chinese snack featuring a savory filling wrapped in a golden, crispy crust. Here’s a refined recipe to capture their authentic flavor.

Ingredients: For the dough, mix 2 cups all-purpose flour with ½ tsp salt. Gradually add ¾ cup warm water and knead until smooth. Let it rest for 30 minutes. For the filling, chop 2 cups of fresh chives, mix with 1 lb ground pork (or tofu for a vegetarian option), 2 tbsp soy sauce, 1 tsp sesame oil, 1 minced garlic clove, and a pinch of white pepper.

Steps: Roll the dough into a log, cut into 8 equal pieces, and flatten each into a circle. Place a tablespoon of filling in the center, fold the dough over, and seal the edges by crimping with a fork. Heat ½ inch of oil in a pan over medium heat.
