Background: A research team led by Professor Yang Gonghuan of Peking Union Medical College found that after analyzing the prevalence and trends of different causes of death among the Chinese population over the past 50 years, cancer has been continuously and significantly on the rise. Particularly between 1991 and 2000, the mortality rates for all types of cancer increased to varying degrees, with the overall death rate rising by 31%. Among these, lung cancer, liver cancer, and breast cancer increased by 56%, 40%, and 38%, respectively.
In the face of the逐年 rising incidence and mortality rates of various malignant tumors, people might not realize that most cancers are caused by diet. Professor Li Peiwen, Director of the Department of Oncology at Traditional Chinese Medicine, China-Japan Friendship Hospital, and a member of the National Committee of the Chinese People's Political Consultative Conference, told reporters: "Besides environmental pollution and other factors, half of the causes of cancer are related to dietary habits."
Fried foods produce a carcinogen called benzopyrene, so foods like fried fish, fried meat, grilled lamb skewers, and fried chicken should not be consumed in excess. However, Professor Li regrets that our children are too heavily influenced by Western dietary habits, and excessive fast food is very detrimental to their health. Moreover, it has long been believed that fried starchy foods are relatively safe, but research has found that frying starchy foods produces "acrylamide," which is also a carcinogenic substance. Therefore, fried starchy foods like french fries are also not recommended for excessive consumption.
Professor Li said that the age of onset for various types of cancer is currently showing a trend of occurring earlier.
