Are soups really that nutritious?

Drinking soup is a dietary habit for us Chinese people, especially in southern regions like Guangdong, where a soup is basically an indispensable dish on the dining table every day. In terms of taste, Xiao Yu loves soup because it is delicious. But if we were to judge it from a nutritional perspective, it's a bit of a stretch.

When making soup, especially chicken, duck, fish, or meat soup, its nutrients are largely destroyed during the long heating process. Because protein itself does not dissolve in water, when you drink the soup, you are consuming more nitrogenous extracts, water, oil droplets, and various seasonings, and there's even the problem of excessively high purine levels.

The nutrition in animal foods is mainly in the tissues of the animal's body. In the thick, white broth, it may seem rich in nutrients, but in reality, the white substance is actually fat particles. Of course, if your body lacks oil, then drinking soup is also beneficial. After all, oil is also a nutrient, and when your body is lacking oil, drinking an oily broth is a way to supplement nutrition. But Xiao Yu feels that nowadays, with people's quality of life having greatly improved, basically very few people still need to supplement oil this way, right?

Therefore, just drinking soup alone, Xiao Yu can't speak highly of its nutritional value. But this doesn't mean you are not allowed to drink soup. If you enjoy the taste of soup, there's nothing wrong with that, because you are enjoying it from a culinary perspective.

So, in Xiao Yu's view, diet can be divided into two levels: the culinary level and the nutritional level. The most ideal state is when the two are combined, but an ideal is, after all, just an ideal. When your body is healthy, it's perfectly fine to pursue things more from a culinary perspective. Of course, everything has a limit, and mastering the balance between food and nutrition is, in itself, a kind of life wisdom!
