Step 3: Wash the pork belly and chop it into a mince. In a bowl, combine the pork mince and chopped shrimp. Add the chopped black fungus and shiitake mushrooms, then season with soy sauce, salt, pepper, and cornstarch. Mix well.
Step 4: Crack in an egg and add sesame oil. Mix until well combined.
Step 5: Place a dumpling wrapper in the palm of your hand and add an appropriate amount of filling. Place half a shrimp on top. Use your thumb and index finger to gather and seal the wrapper. Once all the dumplings are assembled, place them in a steamer and steam until cooked through.

Sprinkle 15g of cake flour on the work surface, take out the risen dough, and repeat the kneading process, gradually incorporating the 15g of flour.
Step 4: Roll the dough into a long log and cut it into small pieces. Roll each piece into a ball, flatten it, and then roll it into a thin round wrapper. Arrange 7 wrappers in a stack and press down firmly in the middle with the back of a knife. Then, start rolling from the top down.
Step 5: After rolling, cut it in the middle. Place the cut side down and gently pinch the cut. Peel the "petals" apart slightly, then thin the edges of the petals a little. Let the shaped rolls rest on the work surface for 15 minutes.
Step 6: After resting, place the rolls in a steamer. Steam for about 10 minutes after the steam starts, then turn off the heat and let them rest in the steamer with the lid on for 2 more minutes.
