Cooking Method: 1. Cut the winter melon into strips and add fine salt. 2. Mix starch and custard powder into a blended powder. 3. Crush the cooked salted egg yolks and toast the sesame seeds. 4. Coat the winter melon strips evenly with the blended powder and deep-fry in oil at 60% heat until cooked, then remove. When the oil temperature rises to 70%, refry until the outer shell is fragrant and crisp and the color is golden, then remove. 5. Heat a little oil in the wok, add red chili, Sichuan peppercorns, chopped green onion, ginger, and the crushed salted egg yolks, stir-fry. Add the winter melon strips, add cooking wine, stir-fry evenly, then plate and sprinkle with toasted sesame seeds to serve.
