When cooking rice, it's common to end up with undercooked rice due to not enough water or insufficient steaming time. The most frustrating part is that such rice can't be cooked properly no matter how long you reheat it. Believe it or not, even beginners in the kitchen might occasionally make this small mistake. So, what should you do if your rice is undercooked?
First, you need to assess the extent of the undercooking and apply different methods depending on how severe it is.
How to Fix Undercooked Rice:
Method 1:
If the entire pot of rice is undercooked, use chopsticks to poke a few holes straight to the bottom of the pot. Add some warm water and steam it again. Start by making one hole in the center that reaches the bottom, then poke several more holes around it, ensuring they are evenly distributed. This allows the steam to penetrate the entire pot of rice.
Method 2:
If only the surface of the rice is undercooked, simply flip the top layer into the middle, add a little water, and steam it again. The amount of water you add should depend on how much of the surface is undercooked. Add more water for a larger undercooked area, and less for a smaller one. Poking a few holes with chopsticks can also improve the result.
Method 3:
If only a portion of the rice is undercooked, poke holes in the undercooked areas, then add an appropriate amount of warm water and continue steaming. If you're unsure if other parts are also undercooked, you can flip the entire pot over, place the undercooked sections in the middle, add the right amount of water, and continue steaming until cooked through.
Method 4:
Another option is to add two to three spoons of rice wine to the rice, stir it evenly, and then steam it. This will eliminate the undercooked texture. Stir the entire pot of rice well, add an appropriate amount of rice wine, and steam it. This not only ensures the undercooked rice is thoroughly cooked but also imparts a delicate fragrance of rice wine, making it more delicious. However, people with alcohol allergies should avoid this method.
Method 5:
Break up the undercooked rice. For every 500 grams of rice, add 50 grams of yellow rice wine (or Shaoxing wine). Pour the wine into the pot, cover, and simmer over low heat until the alcohol has evaporated. This will fix the undercooked rice, and you won't be able to taste the wine.
Important Notes:
If most of the rice is undercooked, be sure to poke several holes in it. These holes should be evenly distributed; you can poke more if needed, otherwise it will be very difficult to cook the rice through.
Pay attention to the amount of water you add again. Don't add too much or too little. Too much will make the rice mushy, while too little will leave it undercooked.
The steaming time can be a bit longer to ensure the rice is thoroughly cooked.
What to do if your rice cooker produces undercooked rice?
When cooking rice in a rice cooker, if the rice turns out half-cooked, the main reason is uneven heating at the bottom of the inner pot.
First, clean any rice grains, sand, or other debris from the bottom of the inner pot to ensure it makes proper contact with the heating plate. Next, you can remove the heating plate, turn the inner pot upside down on a wooden board, and place a 2-5mm thick rubber mat on the board. Then, place the heating plate back on the bottom of the pot and rotate it left and right to check for issues. If you find any uneven spots, place a wooden board on top of the heating plate and gently tap it with a hammer until the heating plate fits snugly against the bottom of the pot. If the problem of unevenly cooked rice persists, you should replace the inner pot.
