Associate Professor Zhuge Ronghua, a microbiology and physiological systems expert at the University of Massachusetts Medical School, has found through research that consuming bitter foods can stimulate taste receptors in airway cells, improving the symptom of breathlessness in asthma patients by relaxing muscles. Some foods (such as Thai stir-fried kale and bitter melon) can also cause already-constricted airway cells to expand, a process also known as bronchodilation. Researchers hope this discovery will pave the way for developing new drugs to treat asthma. These newly developed bronchodilators could relieve asthma attacks more quickly and have fewer side effects than existing drugs.
