The researchers were originally trying to find a way to preserve strawberries. They placed strawberries in ethanol and found that ethanol increased the antioxidant content in the strawberries. Antioxidants can free radicals that damage human cells.

The experiments proved that spirits such as rum, vodka, and tequila can increase the antioxidant content in strawberries and blackberries. The report states that typically, brightly colored fruits and vegetables are rich in antioxidants, and consuming these foods can reduce the risk of cancer, heart disease, and some neurological disorders.
