Two Ways to Eat Soybeans for Breakfast, Double the Nutrition
I. Method for Two Ways from One Bean:
Main ingredients: Soaked soybeans (100g of dry beans), purified water: 1200g
Ingredients: Peanuts (30g), rock sugar (15g), eggs (3), rape (50g), carrots (50g), shredded potatoes (50g), wheat flour (4 liang), salt (6g)
(I) First Way (Soy Milk)
1. Soy Milk: Cook the soaked soybeans and peanuts until done, then drain and set aside.
2. Put the soybeans and peanuts into a soy milk maker, add hot water at about 80°C (the amount of water should be 8-12 times the weight of the dry soybeans), and start the soy milk mode to grind.
3. After filtering the soy pulp with a fine sieve, pour the soy milk into a milk pot, bring to a boil for 5 minutes, turn off the heat, and add rock sugar to drink.
(II) Second Way (Soy Pulp, Vegetable, and Egg Pancake)
1. Shred the potatoes, rape, and carrots and set aside.
2. Put the filtered soy pulp into a clean basin, add wheat flour, eggs, shredded potatoes, rape, shredded carrots, and seasonings, and stir into a paste. Let it rest for 15 minutes.
3. Turn on the electric griddle and heat it up. Wipe a little oil on it, use a spoon to spread the rested batter evenly in the pan and cook until both sides are golden brown, then remove.
