Method:

Cut the pumpkin in half and scoop out the seeds; cut the chicken into small pieces and blanch with the peas, then remove and set aside.

Ingredients: 300g pork liver, 1 green pepper, egg white, cooking wine, dark soy sauce, pepper, chopped green onion, ginger, and garlic, salt, starch, chicken powder as needed.

Method:

Cut the pork liver into slices. Rinse under running water for a while and soak in clean water (this effectively reduces the gamey taste of the liver).

Rinse the soaked pork liver again, drain the water, and marinate briefly with cooking wine, pepper, a little salt, starch, and egg white.

Cut the green pepper into small pieces. Soak the wood ear mushrooms until soft and break into small pieces. Chop the green onion, ginger, and garlic and set aside.

Mix dark soy sauce, cooking wine, chicken powder, starch, and water in a bowl to make a sauce.

Heat oil in a wok until it's about 70% hot. Add the marinated pork liver and stir-fry until it turns red, then remove and drain the oil. Leave a little oil in the wok, add the chopped green onion, ginger, and garlic and stir-fry until fragrant. Add a splash of vinegar, then add the pork liver and green peppers, stir-fry a few times, and then quickly stir in the prepared sauce until everything is well combined.

Corn and Black Sesame Stir-fried with Arctic Surf Clams

Ingredients: 200g arctic surf clams, 100g corn kernels, black sesame, green peas, red chili, lemon, green onion, pine nuts, salt, chicken powder, pepper as needed.

Method:

p>Trim the base of the arctic surf clams. Chop the green onion and dice the red chili.

Bring a pot of water to a boil and blanch the corn kernels and green peas, then set aside.

Heat oil in a wok, stir-fry the green onion until fragrant, then add the diced red chili and stir-fry. Add the corn kernels and green peas, season with salt and chicken powder. Finally, add the arctic surf clams, sprinkle with pepper, and top with roasted black sesame and pine nuts. Serve immediately.
