Stir-fried Onion with Mushrooms
Mushrooms are beneficial for replenishing qi, expelling dampness, nourishing the stomach and moistening the lungs, and can help regulate conditions such as qi and blood deficiency and fatigue. Furthermore, the ergothioneine in mushrooms and the quercetin in onions can boost the body's immune function, lower blood pressure and blood lipids, and prevent arteriosclerosis. A serving of stir-fried onion with mushrooms is nutritionally complete and can also help expel dampness and lower blood pressure.
100g onion, 50g red bell pepper, 200g mushrooms, and an appropriate amount of garlic, starch, cooking oil, salt, chicken essence, and sesame oil. Wash and chop the onion and red bell pepper into small pieces; slice the garlic. Remove impurities from the mushrooms, wash them clean, and cut each one into four small pieces. Heat a wok, add oil, and once hot, sauté the garlic slices until fragrant. Add the mushrooms and stir-fry until they release their juices. Then, add the onion and red bell pepper and stir-fry. Season with salt and chicken essence, thicken with starch, and drizzle in a little sesame oil, stirring until well combined.
