200g kelp threads, 1 red pepper
Seasonings:
1 small red chili, 3 dried chilies, 30g spicy peanuts, 1/2 teaspoon soy sauce, 1 teaspoon vinegar, sugar to taste, salt to taste, 1 packet of chili paste, sesame oil to taste
Steps
1. Wash and cut the kelp threads. Remove the seeds and stem from the red pepper and cut it into thin shreds. Chop the small red chili and dried chilies. Crush the spicy peanuts.
2. Bring water to a boil in a pot. Add the red pepper shreds and blanch for a few seconds, then remove.
3. Immediately place them in cold water to cool, then drain.
4. Blanch the kelp threads in boiling water for 2 minutes.
5. Transfer to cold water to cool, then drain.
6. Mix the kelp threads and red pepper shreds, then add soy sauce.
7. Add vinegar.
8. Add sugar and salt.
9. Heat a small amount of oil in a separate pan. Once hot, add the chili paste and chopped chilies and stir-fry until fragrant.
10. Add the crushed peanuts once the aroma is released.
11. Stir-fry well and then turn off the heat.
12. While still hot, pour the chili-peanut mixture and hot oil over the kelp threads.
13. Add a little sesame oil and mix thoroughly.
