Braised Pig's Trotters
Ingredients: 2 pig's trotters, 2 tablespoons each of dark soy sauce, light soy sauce, and cooking wine, 5 Sichuan peppercorns, 50g rock sugar, an appropriate amount of ginger and scallion

First, scrape off all the hair from the trotters, chop them in half, and prepare the ginger and scallions.
Boil the trotters thoroughly in hot water, then transfer them to cold water.
In a pot, heat the cooking oil, add the rock sugar and let it melt slightly. Then add some water, followed by the trotters, cooking wine, ginger, scallions, Sichuan peppercorns, and salt.
