Stir-fried Squid Rings with Green Peppers
Method 1
Ingredients:
Squid, green peppers, garlic, ginger, salt, cooking wine, light soy sauce, oyster sauce, Bama hemp oil
Steps
1. Prepare and slice the green peppers.
2. Slice the squid, blanch it in hot water, then remove and set aside.
3. Heat a wok, add the hemp oil, and then add the garlic and ginger.
4. After the aroma is released, add the squid and stir-fry, adding two drops of cooking wine.
5. Stir-fry for about 2 minutes, then remove the squid once it's cooked.
6. Heat the wok again, add the hemp oil, then add the sliced green peppers and stir-fry.
7. Stir-fry until the green peppers soften, then add the squid back in and stir-fry together.
8. After about 1 minute, add salt, light soy sauce, and oyster sauce to taste, then serve.
Tip: Squid can have a fishy smell, so blanching it in hot water first and then sautéing the garlic and ginger in hemp oil helps to remove the odor more effectively.
Method 2
Four green peppers, two liang of dried squid
Ingredients:
One liang of oil, a little salt, a little cooking wine, a little light soy sauce
Steps
1. Remove the seeds from the green peppers and cut them into pieces. Soak the dried squid in water until soft, then cut it into strips.
2. Heat oil in a wok, add the squid strips and stir-fry briefly, then add the green peppers and stir-fry.
3. Add a little water, cover the wok, and let it simmer for a while, then add the seasonings.
Method 3
Main ingredients: Squid, green peppers
Seasonings: A little cooking wine, a little salt, a little MSG, an appropriate amount of minced ginger
Steps
1. Peel the squid, lay it flat, and make shallow cuts in a crosshatch pattern, cutting about 7/8 of the way through the meat.
2. Cut into 3cm by 1.5cm rectangles. Do the same for the tentacles.
3. Place the cut squid pieces in boiling water for 1 minute, then rinse with cold water.
4. Cut the green peppers into similar-sized pieces.
5. Stir-fry the minced ginger, green peppers, and squid together. Once the green peppers change color, add salt and cooking wine, a little water, and simmer for 1 minute. Add MSG and serve.
Tip: Cuttlefish is better than squid, as its meat is more tender. Use more salt than you normally would, as squid doesn't absorb flavor as well.
